QUICK AND EASY COCONUT CUSTARD PIE
Quick and Easy Coconut Custard Pie
4 eggs
1 ¾ c. sugar
½ c. self-rising flour
2 c. milk
1 tsp. vanilla
½ tsp. nutmeg
Pinch of salt
4 tbs. butter, melted
7 oz. Flaked coconut
Combine eggs, sugar, flour, milk, vanilla, nutmeg and salt in a blender. Pulse until well combined and smooth. Slowly drizzle in melted butter on low speed. Add coconut and stir briefly. Pour into deep dish 9-inch pie plate. Bake at 350 degrees for 40 - 45 minutes or until a knife inserted into the center of the custard is clean. Remove from oven and allow to set for 45 minutes. Serves 8.
